Ingredients
  

  • pounds sirloin steak cut into 1-inch cubes
  • 1 pound Yukon Gold potatoes diced into ½-inch cubes
  • 4 tablespoons unsalted butter divided (½ stick)
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • Freshly chopped parsley optional, for garnish

Instructions
 

  • Place a cast iron skillet over medium-high heat and pour in the olive oil along with 2 tablespoons of butter. Allow the butter to melt entirely.
  • Introduce the diced potatoes to the skillet, followed by the minced garlic, rosemary, oregano, salt, and pepper. Cook undisturbed for approximately 4 minutes, then stir and continue cooking for another 3–4 minutes until the potatoes are fork-tender. Transfer the potatoes to a separate bowl and set aside.
  • Raise the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted. Arrange the steak bites in a single layer and sear for 1 minute. Stir or flip the pieces and cook for an additional 1–2 minutes, or until they reach the desired level of doneness. Remove the skillet from heat.
  • Reintroduce the cooked potatoes to the skillet, tossing them together with the steak. Adjust seasoning with additional salt and pepper, if preferred.
  • Finish by garnishing with freshly chopped parsley, if desired. Serve immediately and enjoy.
