- 1½ pounds sirloin steak cut into 1-inch cubes
- 1 pound Yukon Gold potatoes diced into ½-inch cubes
- 4 tablespoons unsalted butter divided (½ stick)
- 1 tablespoon olive oil
- 4 cloves garlic minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
- Freshly chopped parsley optional, for garnish
Place a cast iron skillet over medium-high heat and pour in the olive oil along with 2 tablespoons of butter. Allow the butter to melt entirely.
Introduce the diced potatoes to the skillet, followed by the minced garlic, rosemary, oregano, salt, and pepper. Cook undisturbed for approximately 4 minutes, then stir and continue cooking for another 3–4 minutes until the potatoes are fork-tender. Transfer the potatoes to a separate bowl and set aside.
Raise the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted. Arrange the steak bites in a single layer and sear for 1 minute. Stir or flip the pieces and cook for an additional 1–2 minutes, or until they reach the desired level of doneness. Remove the skillet from heat.
Reintroduce the cooked potatoes to the skillet, tossing them together with the steak. Adjust seasoning with additional salt and pepper, if preferred.
